Franziska Spritzler is a Registered Dietitian and Certified Diabetes Educator who favors a carbohydrate-restricted, whole-foods approach to managing diabetes and insulin resistance. She works in private practice in Huntington Beach, California, and has been following a low-carb lifestyle since early 2011.

Jennifer Elliott is a qualified nutritionist and has worked as a community dietitian for many years. Her interest in a lower-carbohydrate approach for managing weight problems and type 2 diabetes began 18 years ago after her teenage daughter was diagnosed with insulin resistance. Finding that a lower-carbohydrate diet helped her daughter feel well and maintain a healthy weight, she then started using the same approach with clients, with equally good results.

Jennifer is an independent researcher and her article "Flaws, Fallacies and Facts: Reviewing the Early History of the Lipid and Diet /Heart Hypotheses"is published in the October 2014 issue of Food and Nutrition Sciences.
